Cheddar (Old) Bay Biscuits
Tools you need:
· Medium size bowl
· Spatula
· Whisk
· 2 oz Ice Cream Scoop
· 1-2 Sheet pans
1. Cut the butter into ½ inch to ¼ inch chunks and chill
2. Preheat the oven to 400 F (204 C)
3. Whisk flours, sugar, spices, and salt in a medium sized bowl
4. Rub the shortening and cold butter into the dry ingredients with your hands until the fat has almost completely disappeared, there should be some pea sized pieces of fat, and the flour should feel slightly thicker and hold itself together slightly when squeezed in a hand
5. Add the cheeses to this mixture and toss with your hands to distribute
6. Pour all the Buttermilk into the dry ingredients and fold together until all of the dry ingredients have been hydrated
7. Use a 2 oz ice cream scoop to scoop 14 biscuits onto a sheet pan
8. Bake the biscuits for 30 minutes or until the edges are a deep orange brown
